Ingredients (Serves 4)
16 medium sized Button Mushrooms
1 Red pepper
1 Green pepper
1 Courgette
3 tbsp Rapeseed Oil or Olive Oil
Salt and Black pepper
1 tbsp freshly chopped Parsley
2 Garlic Cloves, crushed
A squeeze of Lemon Juice
Method
1. Place all the ingredients in a bowl, mix well and leave for 10 minutes.
2. Thread the mushrooms onto 4 short skewers and cook over medium to hot coals for 10-15 minutes, turning from time to time and basting with any remaining oil mixture. Serve immediately.
